Eat Cauliflower, Become a Bodybuilder!

Nor should you... you can start by serving up this delicious cauliflower dish as a winter warmer or serve cold for a summer lunch. 

Serves 4

Ingredients:

1 large head of cauliflower cut into florets

1 T extra virgin olive oil

salt and pepper to taste

1 tsp white truffle oil

ΒΌ Cup fresh chopped flat leaf parsley

Instructions:

Preheat oven to 400F

Line a rimmed baking sheet with parchment paper.

In a large mixing bowl, toss cauliflower with olive oil, salt and pepper. Spread evenly on prepared baking sheet and roast in oven for about 30 minutes, or until well caramelized.

Remove from oven, drizzle and toss with truffle oil, chopped parsley and additional salt and pepper as desired.

*If you eat dairy, a sprinkling of shredded Parmesan cheese will give this cauliflower an additional delicious flavor boost!
