Berry, Pistachio and Quinoa Salad

1/3 Cup cooked red quinoa

1/4 Cup blueberries

5 Strawberries

1/4 Cup blackberries

2 tbsp pistachios, roasted and chopped roughly

Dressing: 1 1/2 tbsp lime juice

1/2 tbsp fresh mint leaves finely chopped

Cook quinoa according to packet instructions

Combine all ingredients in a bowl

Max up the dressing in a separate bowl and then drizzle over the top

Leave to marinate in the fridge for as long as possible

Serve it up!
